I shared some of my favorite healthy Valentine’s Day treats with the Q13 FOX News team. These are easy to make, and super yummy! What a fun morning! Thank you Bill and Q13 FOX News!

I Love U Bars
This is a yummy granola bar full of healthy ingredients that you can keep in the fridge or freezer and grab one to go! It’s a great snack to take to school, too. These granola bars disappear quickly at our house. I hope you like them too!

Ingredients
  1. 3 ½ cups rolled oats
  2. ½ cup raisins
  3. ½ cup cranberries
  4. ½ cup toasted sesame seeds
  5. ¼ cup ground flax seeds
  6. 1 tablespoon ground cinnamon
  7. 1 teaspoon salt
  8. 2 tablespoons chia seeds
  9. 1 ½ cups Valencia Peanut Butter
  10. 1 cup honey
  11. ¼ cup melted butter (or non-dairy alternative, such as Earth Balance)
  12. (Optional) Nuts, such as cashews
  13. (Optional) Chocolate chunks
  14. Red fruit leather (organic, all-natural)
  15. Extra peanut butter
Instructions
  1. Combine oats, raisins, cranberries, sesame seeds, flax seeds, cinnamon, salt, chia seeds, and chocolate chunks in a large bowl.
  2. In a small saucepan, melt the butter, honey, and peanut butter and mix to combine.
  3. After allowing it to cool a bit, pour the peanut butter goo into the large bowl and mix well so that all of the oats, fruit, and seeds are coated with the goo.
  4. Lay some parchment paper on a cookie sheet. Place some of the dough inside a large heart-shaped cookie cutter and using a small spoon, press down to pack the dough in tightly in the cookie cutter. While pressing down on the dough, carefully remove the cookie cutter, leaving a heart-shaped dough. Use the spoon to pat down any edge that is sticking out.
  5. Bake in the preheated oven at 350F degrees for 15 minutes. Refrigerate until hard, about 30 minutes.
  6. With the smaller heart-shaped cookie cutter, cut out heart shapes from red fruit leather.
  7. Using a little bit of peanut butter, glue the heart-shaped fruit leather to the bottom side of the granola bar (it's flat so the leather will stick better.)
  8. You can keep it frozen, or in the refrigerator. They are great for Valentine's Day parties, and for school snacks! Enjoy!

Peanut Butter Jelly Apples (P.B.J.A.s)
These are to die for! It only uses 4 ingredients and they are easy to make! Use any shape cookie cutter, but we used a heart for Valentine's Day 🙂

Ingredients
  1. Apple
  2. Nut butter (100% Valencia peanut butter is best)
  3. Jam or jelly (no-seed jelly works best, and get the brightest red color you can get!)
  4. Fruit leather
  5. Small cookie cutter
Instructions
  1. Slice the apples about 1/4 inch thick, horizontally.
  2. Group the slices into pairs that will be used to make the little sandwiches.
  3. For those slices where there is very little core (small enough to just eat), spread peanut butter over the entire slice. Cut a heart-shape (or any shape) out of the other slice, taking out its core. Place it on top of the slice with peanut butter. Add a dollop of jam inside the cut-out, and spread to cover up the cut-out.
  4. For those slices where the core is too tough to eat, use a cookie cutter to cut the core out of both the bottom and top slices. Spread peanut butter over the bottom slice. Take a piece of fruit leather and place it over the hole, and top with the top apple slice. Add a dollop of jam inside the cut-out, and spread to cover up the cut-out.
