Thank you to all those who came out to Frog Legs Culinary Academy at University Village to say hi! I had a blast meeting all of you. 

I made the One-Pot Pasta with Tomatoes, Greens, and Garlic, and gave out samples – everyone seemed to love it! I also gave out tons of samples of the Clementine and Mango Yogurt Smoothie, and loved that some kids came back for more. ❤️

If you haven’t yet, check out Frog Legs – they have cooking classes for kids, teens, and adults in both the University Village and Kirkland locations, and at U Village, they have a store that is full of super cute items, plus fresh-baked goodies and cookie dough served up like ice cream! They are all delicious, we got to taste a bunch!

Clementine and Mango Yogurt Smoothie

This is a clementine-inspired recipe from when I visited the grove in California. Up until then, I never thought to put clementines in my smoothies, but holy moly, now I’m hooked! Clementines are very similar to oranges, but they are a bit sweeter and have an awesome tartness to them. They add such a refreshing, tanginess to this drink. Sweet, tart, and creamy, this smoothie is great any time of day, whether it’s for breakfast, snack, or dessert.

Ingredients

  • 4 clementines peeled
  • 1/2 cup/83 g frozen mango
  • 1/4 cup/60 g vanilla or plain yogurt
  • 1 tablespoon honey or to taste
  • 4 to 5 large ice cubes optional

Instructions

  1. Blend together all the ingredients in a blender until smooth. You can add ice for a super cold, thicker smoothie.
  2. Serve in a glass with a straw, or if you made it really thick, you can enjoy it with a spoon.
