My favorite salad is Greek Salad, and I am honored to have it as the featured salad on the Whole Kids Foundation website this week! I showed how simple it is to make on Q13 FOX this morning. Kaci and Bill will agree – it’s super tasty! 😀

Whole Kids Foundation works to improve nutrition and wellness for kids, and they do cool stuff like put salad bars and build organic gardens in schools. So amazing!

Greek Salad with Grilled Chicken
Greek salad is one of my favorite salads to make and eat! In this episode, I made it for my family, including my grandparents, uncle, aunt and baby cousin. You can see my baby cousin loves it 😀

For the salad
  1. Romaine Lettuce, chopped
  2. 1/2 can of black olives, pitted
  3. 1 tomato, cut into wedges
  4. 1 cup chopped cucumber
  5. 1/4 cup fresh lemon juice
  6. 1/4 cup extra-virgin olive oil
  7. 1 small garlic, pressed
  8. Salt and pepper, to taste
  9. Feta cheese (optional)
For the grilled chicken (optional)
  1. 1/4 cup fresh lemon juice
  2. 1/4 cup grape seed oil
  3. 1 small garlic, pressed
  4. Salt and pepper, to taste
  5. 2 chicken breasts, sliced in half lengthwise to make 4 very thin chicken breasts
  6. Preparation
Instructions
  1. To make the chicken marinade, combine the lemon juice, grape seed oil, garlic, and salt and pepper in a large plastic ziploc bag. Place the chicken in the bag, seal, and let it marinate in the refrigerator for 4 to 6 hours.
  2. Set grill to medium. Place the chicken breasts on an oiled cooking grate, and grill uncovered a few minutes on each side, or until fully cooked through.
  3. To make the salad dressing, whisk the lemon juice, olive oil, garlic, salt, and pepper until combined.
  4. In a large bowl, place the romaine lettuce, olives, tomatoes, and cucumber. Pour some of the dressing on top, and toss to coat (amount depends on your taste.) Place crumbled feta cheese in a separate bowl and let your guests sprinkle it on top of their salads.
