This is a healthy, delicious soup that is delightful to the belly! 😀 Enjoy!

Ingredients
- 8 cups chopped organic fresh tomatoes, (or 2, 28-oz cans of organic tomatoes)
- 1/2 onion
- 8 whole cloves
- 4 cups chicken broth (you can use vegetable broth as well)
- 4 tablespoons butter (or dairy-free butter alternative, such as Earth Balance)
- 4 tablespoons all-purpose flour
- 1 teaspoon salt
- 2 teaspoons white sugar, or to taste
Instructions
- Poke the cloves into the onion wedge.
- In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors.
- Remove the onions and cloves, and put the soup through the blender until smooth. If you have to do it in 2 batches, pour the smooth soup into a big bowl while you do the next step.
- In the now empty stockpot, melt the butter over medium heat.
- Stir in the flour to make a roux, cooking until the roux is a medium brown.
- Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest.
- Season with sugar and salt, and adjust to taste.
