New Video! Breakfast for Dinner with Lexi #stayhomestaysafe

Hey everyone!

This is the first video in my #stayhomestaysafe cooking series. Lexi and I made breakfast for dinner, and decided to film it! This meal is super easy, and a great way to enjoy some of your breakfast favorites at night. We had such a fun time cooking together, and hope you guys enjoyed following along with us!

Egg Scramble

Ingredients:

  • 12 eggs
  • 2 TBSP milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1.5 cups ham
  • 4 cups spinach
  • 1/4 tsp garlic powder
  • (Feel free to add your favorite breakfast ingredients such as bacon, tomatoes, potatoes, peppers, onions, etc! It is totally customizable!)

Directions:

  1.  Cut ham into 1/2 inch cubes and sauté until golden brown. Add spinach and cook for 2-3 minutes until fully wilted. Add garlic powder and mix.
  2. Whisk together eggs, salt, pepper and milk. Mix in cheese.
  3. Add egg mixture to the pan with the spinach and ham, and cook for 3-4 minutes, or until the eggs are cooked to your liking.
  4. Enjoy!

Note: This recipe makes enough eggs for 4 large portions. If you are making this as a single serving breakfast, I would cut the recipe down to at least quarters.

  1. Hey Amber, I thought of this new recipe, it is Nutella oatmeal. I thought of this when I saw a whole ton of empty Nutella containers in my cupboard and even though Nutella isn’t very healthy and that kind of ruins your “Being healthy is cool” statement, I would still recommend this recipe.

    Ingredients:

    1 empty Nutella jar with a little bit of Nutella still in it

    1 cup of instant oats

    1/4 cup of milk of your choice

    Directions:

    Add your oats and milk into the jar then shake it until it becomes thick (it took me about 30 – 40 seconds)

    Amber, I absolutely love your recipes and I will post a video to this website of me making the oatmeal. I hope to make it sometime this week. My family LOVED this recipe and couldn’t get enough of it! Thanks for all your amazing recipes Amber!!

  2. *also don’t forget to heat up your milk, I put it in the microwave for about 1 min and 30 sec then I put in my thermos if I am going somewhere like camping, or a soccer game that is out of town. ( I play volleyball as well, but I don’t travel for that.)
