Scrumptious Grain-Free Raspberry Muffins

Many people are trying to limit the amount of grains they eat. Here’s a super yummy muffin without any grains (it calls for almond flour) – and you will never miss it! It’s sweetened with honey too. It’s healthy and delicious. Give it a try!

Scrumptious Grain-Free Raspberry Muffins

Ingredients
  1. 2 cups almond flour
  2. 2 whole eggs
  3. 1/4 cup butter (we use Earth Balance, a dairy-free butter alternative)
  4. 1/4 cup honey
  5. 1 tablespoon vanilla extract
  6. 1 teaspoon apple cider vinegar
  7. 1/2 teaspoon baking soda
  8. 1/4 teaspoon sea salt
  9. 1 cup fresh raspberries (or thawed from frozen)
Instructions
  1. Preheat oven to 350F. Spray the top of your muffin tin with a little bit of oil so any part of the muffin that might spill over the top will not stick. Line the muffin tin with 12 paper liners.
  2. Combine all the ingredients except for the raspberries and mix well, until the batter is a uniform consistency. Gently fold in the raspberries until they are spread throughout the batter.
  3. Bake for 15 or 20 minutes, until golden brown on top and cooked through. I like mine a bit crunchy on top!
