Many people are trying to limit the amount of grains they eat. Here’s a super yummy muffin without any grains (it calls for almond flour) – and you will never miss it! It’s sweetened with honey too. It’s healthy and delicious. Give it a try!
Scrumptious Grain-Free Raspberry Muffins

Ingredients
- 2 cups almond flour
- 2 whole eggs
- 1/4 cup butter (we use Earth Balance, a dairy-free butter alternative)
- 1/4 cup honey
- 1 tablespoon vanilla extract
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup fresh raspberries (or thawed from frozen)
Instructions
- Preheat oven to 350F. Spray the top of your muffin tin with a little bit of oil so any part of the muffin that might spill over the top will not stick. Line the muffin tin with 12 paper liners.
- Combine all the ingredients except for the raspberries and mix well, until the batter is a uniform consistency. Gently fold in the raspberries until they are spread throughout the batter.
- Bake for 15 or 20 minutes, until golden brown on top and cooked through. I like mine a bit crunchy on top!
