What’s your holiday tradition? We have a huge soup bar on Xmas eve! Here are 2 healthy soups that my sister and I love! They share a key ingredient – KALE – and it’s super yummy in these soups. Thank you Bill, Kaci, and the Q13 FOX News crew for having me, it was super fun! 😀

White Bean and Green Soup
This soup is creamy and delicious! You'll never guess it's also healthy. I don't like eating kale raw but I love it in this soup, it gives it a great texture and the soup clings on to the kale. I hope you enjoy it as much as me and my sister!

Ingredients
  1. 1 tablespoon grapeseed oil
  2. 8 large garlic cloves, crushed or minced
  3. 1 medium yellow onion, chopped
  4. 4 cups cups chopped raw kale
  5. 4 cups cups low-fat, low-sodium chicken or vegetable broth
  6. 2 (15 ounce) cans white beans, such as cannellini or navy, undrained
  7. 1 teaspoon salt
  8. 2 teaspoon chicken or vegetable better than buillon paste
Instructions
  1. In a large pot, heat oil. Add garlic and onion and sauté until soft.
  2. Puree one can of beans (with its liquid) in a blender until smooth.
  3. Add broth, pureed beans, the other can of unpureed beans, 1/2 teaspoon salt, and bullion. Simmer 5 minutes.
  4. Add kale and simmer until wilted.
  5. Ladle into bowls; sprinkle with chopped parsley.

Chicken Sausage and Kale Soup
This soup is AMAZING! It's so delicious and big flavor clings to every nook and cranny of the kale. Bonus - kale adds vitamins and fiber too, helping to fight disease! We use chicken sausage and a little bit of nitrate-free bacon to give it lots of flavor. You'll love it, my sister and I always get seconds!

Ingredients
  1. 1 lb. chicken sausage, mild Italian
  2. 4 slices bacon, cut into 1/2 inch pieces
  3. 1 large onion, diced
  4. 1 tablespoon minced garlic
  5. 4 cups chicken broth
  6. 3 cups (or so) fresh kale, tough stems removed and torn into bite-sized pieces
Instructions
  1. In a non-stick or lightly oiled pan, cook the sausage in a heavy-bottomed pot over medium-high heat until crumbly and cooked through. Drain and set aside.
  2. Cook the bacon in the same pot until crisp, then drain, leaving a few tablespoons of drippings with the bacon in the bottom of the pot.
  3. Stir in the onions and garlic; cook until onions are soft.
  4. Add chicken broth and sausage and bring to a simmer. Add kale just before serving and mix until it wilts.
