Savory chicken sausage, a bit of smokey bacon, and rich chicken broth clings to every nook and cranny of kale in this amazing soup that is a family favorite! We are serving this soup at our annual Xmas Eve party, where every year, we have a huge soup bar for our huge family of about 40 people.

Chicken Sausage and Kale Soup
Ingredients
- 1 pound/455 g mild Italian chicken sausage
- 4 slices bacon cut into 1/2-inch/1.5 cm pieces
- 1 large yellow onion diced
- 1 tablespoon peeled and pressed garlic
- 3 cups/200 g fresh kale
- 4 cups/905 ml chicken stock
- Salt and freshly ground black pepper
Instructions

In a large pot or Dutch oven, cook the bacon over medium-high heat until crisp. Scoop out the bacon and set aside on a plate lined with a paper towel. Add the sausage to the bacon drippings in the pot and cook through until crumbly. Remove the sausage and add it to the plate with the bacon.

Leave a few tablespoons of drippings in the bottom of the pot. Add the onion and garlic and cook until the onion is and translucent.

Wash and stem the kale. You can do this by holding the stem with one hand and running the other hand down the stem from base to tip, ripping off the leaf in the process. Tear into bite-size pieces.

Add the chicken stock, as well as the bacon and sausage, to the pot and bring to a simmer. Add the kale just before serving and mix until it wilts. Season with salt and pepper, and enjoy.

hey amber looks delicious!!!! cant wait to try it!! and I was wondering my mom has this diet thing that her doctor is making her do its low sodium so not a lot of salt:-( and I was wondering if you could maybe find a recipe that has low sodium. That would be a life saver I have been eating at this place called Rubio’s for about 6 months straight and i’m kinda get tired of all the fish tacos
