Today, I made some Thai food at Q13 FOX News! YUUUUUMMM! My dad didn’t think he’d like the Yummy & Lime-y Coconut Chicken Soup, but he LOVED it! These recipes are so yummy, but so simple to make, kids can do it too! Give it a try!

Yummy and Lime-y Thai Coconut Chicken Soup
Check out this lovely soup. It is so good! It's creamy (but it's dairy free), it's got the tangy taste of lime, and chewy chicken. I call it Yummy and Lime-y because the lime flavor is one of the main flavors. It's DELICIOUS!

Ingredients
  1. 1 boneless, skinless chicken breast
  2. 2 tablespoons grapeseed oil
  3. 2 (14 ounce) cans coconut milk
  4. 2 cups water
  5. 1 tablespoon grated ginger root
  6. 4 tablespoons fish sauce
  7. 1/3 cup fresh lime juice
  8. 1/4 teaspoon cayenne pepper
  9. 1/2 teaspoon ground turmeric
  10. Chopped fresh cilantro for topping
Instructions
  1. Cut chicken into thin strips. Heat oil in a pot and saute the chicken for a few minutes.
  2. Add coconut milk and water and bring to a boil. Reduce heat. Add ginger, fish sauce, lime juice, cayenne powder and turmeric. Simmer until the chicken is done, about another 10 to 15 minutes.
  3. Sprinkle cilantro.

Refreshing Thai Cucumber Salad
This is super easy, and super yummy! It goes great with Yummy Lime-y Coconut Chicken Soup! šŸ˜€

Salad
  1. 1 English cucumber, chopped
  2. 1 shallot, minced
  3. 1/4 cup red bell pepper, diced small
  4. 2 green onions, sliced thin
  5. 1/2 cup fresh cilantro, chopped
  6. 1/4 cup roughly chopped dry roasted peanuts (preferably Valencia peanuts)
Dressing
  1. 2 Tbsp. fish sauce
  2. juice of 1/2 lime
  3. 1 clove garlic, minced
  4. 1 Tbsp. soy sauce
  5. 1/4 tsp. cayenne pepper, to taste
  6. 1-1/2 tsp. sugar, to taste
Instructions
  1. Cut the cucumber lengthwise, then again twice for each half so you end up with 6 long strips. Chop the cucumbers across the strips so you have small bite-sized pieces of cucumber.
  2. Place the cucumber, minced shallot, green onion, red pepper, and cilantro in a bowl.
  3. Combine the ingredients for the dressing.
  4. Pour about half of the dressing over the salad and toss. Taste to see if you need more - this dressing is strong, so add a little at a time!
  5. Sprinkle roasted peanuts over the top and serve.
