This was last night’s dinner and it was SO GOOD! I had 2 big bowls! My sister loved it too.

Southwest Salad with Creamy Cilantro Lime Dressing
Tangy, creamy, crunchy, DELICIOUS. My sister and I love this main-course salad! This would also be great to layer in mason jars and keep in the fridge for to-go salads!
  1. Romaine lettuce, chopped
  2. Cherry tomatoes, halved
  3. Avocado, cubed
  4. Corn kernels
  5. Black beans
  6. Tortilla chips, crushed
  7. Cilantro for garnish
  1. 1 bunch cilantro, tough stems removed
  2. 1/2 cup good quality mayonnaise, or homemade mayo
  3. 2 cloves garlic
  4. Juice of 1 lime
  5. Pinch of salt
  1. Place lettuce in a bowl.
  2. Arrange the tomatoes, avocado, corn, black beans, and tortillas in stripes, or in piles on top of the lettuce.
  3. Drizzle with the dressing, and sprinkle with cilantro.
