So many fruits and veggies are ripe this time of year! It’s awesome. Here are a few ideas on how to use those delicious fruits and veggies!

Bruschetta

Ingredients
  1. Ripe tomatoes, 2 or 3
  2. 1 clove of garlic, crushed
  3. handful of basil, cut into ribbons
  4. Extra virgin olive oil
  5. Salt
Instructions
  1. Mix all the ingredients. Serve with crostini.

Tomato Basil Deliciousness

Ingredients
  1. Nice ripe tomatoes
  2. Basil leaves
  3. Extra-virgin olive oil
  4. Salt
Instructions
  1. Slice the tomatoes, and pick leaves off the basil stems.
  2. Arrange the tomatoes on a dish, overlapping them slightly. Put a basil leaf between the tomato slices.
  3. Drizzle with olive oil, and sprinkle with salt. That's it!

Zucchinni Puffs

Ingredients
  1. ½ cup butter
  2. ¾ cup honey
  3. 1 egg
  4. 2 cups whole-wheat flour
  5. 1 teaspoon baking soda
  6. ½ teaspoon cinnamon
  7. 1 pinch nutmeg
  8. 1 pinch ground cloves
  9. 1 pinch salt
  10. 1 cup rolled oats
  11. 1 cup raisins
  12. 1 cup grated zucchini
Instructions
  1. Cream butter add honey. Add egg and beat well.
  2. Combine flour, soda, cinnamon, nutmeg, cloves, salt, rolled oats, and raisins in a separate bowl.
  3. Add flour mixture alternately with zucchini to egg mixture.
  4. Drop by teaspoon onto a cooked sheet lined with parchment paper.
  5. Bake at 375 Degree F oven for 10-15 minutes (time may vary as all ovens are different.)
